Avocado Pound cake

Avocado butter cake
Thanks to all for the best wishes given to my sister. Now this cotton cheesecake with blueberries filling is a hot cake in my family, my younger sister also asked me to bake one for her coming May's birthday. I started to think of selling this cake as to earn some pocket money, hehehe...Today i would like to share with you a new cake, Avocado Pound cake.




My SIL Annie given me a packet of this corn meal (polenta) which I have been looking to buy some, but i couldn't find this corn meal in nearby supermarket...

I bought 3 Avocados from Tesco which only cost me RM 3.50 (USD1). This is discounted price as those avocado not in good looking skin but I think is still good to use for baking. I managed to find this recipe in Joy of Baker which use both avocado and corn meal..

Avocado butter cake


Avocado Pound cake
(recipe source: adapted from Joy of baker with minor changes)

*makes a loaf pan

Flesh of 1 Avocado
50ml milk

125g butter, softened
150g sugar
1/2tsp vanilla extra

2 eggs

200g cake flour
40g Polenta (fine corn meal)
1/2tsp baking powder
1/2tsp baking soda
1/4tsp salt

Method
1. Blend avocado flesh together with milk, set aside.
2. Beat butter, sugar and vanilla until light and creamy.
3. Add in eggs one at a time, beating well after each addition.
4. Put in avocado milk mixture, combine well.
5. Add in flour, Polenta, baking powder, baking soda and salt, mix well.
6. Bake in a pre-heated oven at 180c for 45 minutes or until done when tested with a skewer.

** I like this pound cake which has mild avocado aroma, buttery and soft...

Jane, this was my 1st time bake a avocado cake, have no idea what to be substituted. I would suggest you just omit corn meal and slightly increase the flour.

I think Avocado will yield a very soft and creamy cake. Would like to try this also because I like the light fragrance of avocado :)

oh this is a unique pound cake. I love pound cakes, but never tried any with avocados in it. Should be a great treat to the taste buds.

The texture looks amazing Sonia! Now this is the type of pound cake I would like to sink my teeth into. Your cotton cheesecake sounds very good...so good you could make a lot money selling it :D I would just have to change the filling for myself :)

Wow you certainly get a great bargain out of the avacados. Over here the cheapest I can find is 0.75 cents each and that also when they are in season. I actually never bake with avacado. It is a good idea to incorporate them into cakes since they are so creamy. Well done Sonia!
